Tina ärtorna. Knåda samman de malda mandlarna med mjöl, smör, ägg och salt till en pajdeg. Slå in degen i plastfolie och låt den vila svalt i 30 minuter.

 Skölj dillen, skaka bort vattnet, ta bort bladen från stjälkarna och hacka dem. Rör ihop resten av äggen, Saint Agur-blåmögelosten och mjölken och mixa det med en stavmixer. Smaksätt blandningen med salt, peppar, citronsaft och citronskal. Tillsätt hackad dill. Skölj laxen, badda den torr och skär den i 2 cm strimlor. Sätt ugnen på 200 grader.

Kavla ut degen på ett mjölat arbetsbord. Klä en smord pajform med pajdegen. Lägg laxbitarna i en rosett på degen. Strö över ärtorna så att de hamnar i mellanrummen. Häll över ostkrämen (så att den täcker laxen till hälften). Grädda pajen längst ner i ugnen i 200 grader i 25–30 minuter. Dekorera den färdiga pajen med dill.
